Innovative burger bun competion 2.0

In 2020 I entered my first baking competition where I had to create a burger bun and a sweet breakfast item.

I made an Hawian burger bun with dried pineapple and a half coffee- half coconut muffin.

The number of times I made muffins in one week was crazy. It was at least 10 batches to make sure the coffee was strong enough. I used an expresso, instant coffee, and coffee flavoring to make it strong enough.

Creating and making a burger bun, experimenting with flavors on my own as opposed to making bread in a structured lesson was quite a unique experience. I learned a lot, especially molding them perfectly and what flavors and toppings work well together.

If you’re wondering what the results were, I did win first place (whoo). it did feel nice to know I am capable of creating my own ideas.

This year, last week I re-entered the competition. making an Ube, sun-dried tomato and cheese burger bun, and a strawberry green tea baumkuchen. I had leftover Purple Ube powder from my patisserie exam so why not put it in bread?

The baumkuchen was originally going to be dorayaki (two American pancakes filled with sweet red bean paste ) but my paste was too salty and tasted like fish. Thinking on the spot I quickly ordered some strawberry green tea that came 20 minutes later and used that in some buttercream.

They both tasted really nice even if they weren’t as complicated and intense as my 2020 ones.

This year over 72 people entered when last time it was only 20 so I wasn’t expecting to win (which I didn’t). but i’m so glad that the majority of lv3 (the year below me) decided to enter the competition. The amount of ideas I heard we’re so fun, like a marmite and mustard bun or cheesy garlic ones.

Not sure what ill do next time but I cant wait to try…

Final Assessments

It’s that time again, where I’m busy getting ready for my finals next week. There’s been a lot more work than i was expecting, compared to level 3. I’ve also had to do a 12 week reflective journal, documenting and feedbacking myself on all of these products that are new to me. Most of these products I’ve never eaten before, let alone made them from scratch, so I’ve definitely learnt a lot this year and I can’t wait to learn more in the next half.
In the photo shown below I’m practising making a matcha joconde cake with a pear mousse and jelly, served with a kiwi coulis ( i forgot how strong kiwi’s are).

Recipie book

Whenever I try a new recipe I always write it down (over 70 since I started college) that way I don’t have to have piles of recipie sheets everywhere,
and I get to write my own instructions since my college recipies don’t come with any.
I use perfectly penned’s book that has so many pages and looks professional.
My other book is for crazy recipies I’d love to try one day most are of Asian culture. I just use a random small notebook for that.

Coburg recipe

Coburgs a simple bread usually known as a cob or as some poeople even call it; bread cake.

The big ones like in this recipe, are good for toast or even garlic bread.

if you wanted to you could make them smaller and have burgers. or you can make a massive burger, its up to you.

After 10 long weeks I have finally completed my business course.!

I learnt all about starting up my own business and managing money and marketing. It was very insightful and I learnt a lot.

They are perfectly bite sized and just melt in the mouth.

Maybe something healthier…

When you think of baking does your mind think of delicious cakes and gooey choc chip cookies well i think of that too.

When i bake every week i don’t want to just make just sugary (still nice though) bakes, maybe something healthier like i was thinking of doing baked, healthy meals so my baking is of use.

According to the NHS there has been an increase in obesity by only 18% since 2017 but just think that if we keep eating fatty/ unhealthy foods that number could rise by a huge amount…

This weekend i made fruity flapjacks and scones with reduced sugar which were amazingly delicious and i don’t usually like scones which is a bonus. So maybe i could make more foods like that. Plus im getting more fruit and nuts into my diet especially the ones that give my iron as im low in that Fe metal.

So maybe we all should try to make something without adding sugar or something to give us our 7 a day as it will help us all out.

Jammie Dodgers

Happy valentines everyone.

For this week I wanted to make some jamie dodgers as they are the biscuits of love.

The jammie dodgers holes are shaped like: Batman, a heart (kindof) and an L as it was also my best friends birthday. He really liked it.

The biscuits i made were very thick but still melted in my mouth. Next time i’d probably make them thinner. At Least the ratio of jam to biscuit was perfect…

Bakewell tarts

I haven’t made pastry since 2016 so i decided to make some bakewell tarts.

They were made with half and half flour as i only had 100g of plain flour so why not use 100g of whole wheat too?

They tasted good and looked rustic and instead of icing i used just icing sugar so it’s not too sweet.

Gooey, Cheesy, Pizza, Pasta.

This is my own recipe that i’ve created because I love pasta and I wanted to mix it with pizza.

I did a-lot of research on cheese and from my own preferences and picked out the best cheeses for this dish.

However I have not yet made this but I will soon…


Mozzarella: This cheese, made in Italy, is made from the milk of the water buffalo (buffalo mozzarella) or cows (mozzarella). Tastes salty and mildly creamy.

Monterey Jack: This cheese, made in the USA, is made from a cow and lasts up to a month. Very gooey and easy to melt. Tastes mildly buttery from it high butterfat contents.

Cheddar: This cheese comes from good old England and it’s made from the milk of cows. Tastes deep, tangy and nutty and lasts about a year.


Tagliatelle: Originated in Italy, this pasta is the flat, rolled pasta of the Emiglia-Romagna region where it’s made fresh and then cooked.

Add ons:

Sweet basil: Most common type of basil used in italian cuisines and tomato dishes. Tastes mild and sweet.

Tomato sauce: This will add 5 a day to the pasta and provide a fresh, tangy taste.

Salami: A cured sausage made from fermented and air-dried beef or pork.


What you will need:

50 ml of Unsweetened Cashew Milk

45g of Butter.

45g of Flour.

62g of Mozzarella.

100g of Light Mature Cheddar.

100g of Monterey Jack.

250g of Tagliatelle.

3 Basil Leaves. (For Garnish)

50g of Tomato Puree.

5 slices of Salami Chopped.

How to make it:

Step 1: On a high heat boil the pasta in water for 8-10 mins or until soft all the way through.

Step 2: Once cooked, strain until excess water has gone.

Step 3: On a medium heat, melt the butter and add the flour.

Step 4: In the same pan, melt the light mature cheddar and Monterey Jack until combined whilst slowly whisking the milk in at the same time to form a thick, gooey, glossy, mixture and hopefully no lumps.

Step 5: Add in the tomato puree and the chopped salami and stir till combined.

Step 6: Take the mixture off the heat and fold in the pasta.

Step 7: Serve with a garnish of basil and enjoy!

My Mum’s B-day Cake

For my mums b-day i made her an unicorn colored, orange cake and im just gonna say do you know how people don’t like cake as its “too sickly” well this is the solution as omg it has sugar in but it is not sickly at all! Plus, my mum loves it.

If this looks familiar, the cat it bongo cat (meme cat) but i added colourful ears and arms.

My little bro said it was “very well designed and yummy”.


Made 4 pizzas this week. (very fun.)


My 1st pizza was a homemade, cheese-string stuffed crust, healthy, whole wheat, pizza (that was a mouthful) and it was goood. However, the cheese strings weren’t very gooey like the internet said they would but i should’ve known as ‘don’t believe everything you see on the internet’.

2 days after…

Went to a chesterfield college taster session as I want to do a baking apprenticeship. I made 3 Hawaiian pizzas and I learnt some knife skills (with a massive knife), and that white dough is nicer that whole wheat dough and that I really want to be a baker as apart from the awkward silence it was really stress-free and fun.

p.s: if anyone in chesterfield, derby shire,England knows any bakeries that do apprenticeships for next year let me know in the comments.

Rich Iced Biscuits

 Ooo i love these and they’re the 1st biscuits that i can actualy shape so of course i made ninjas with my dads cookie cutters and then i also made a cat for my bro and a shark dog usong a knife.

These probably work better than the others due to the recipie as usually i use American recipies yet im British so this time i used a british one and its better.

Easter Cupcakes

Oooh, these were something. I made some rich chocolate cupcakes with the leftover icing on top from the Victoria cake I made a couple of weeks ago.

The icing was in the fridge chillin out hopefully hardening but nope I put it in a piping bag and started piping but then I realised there was a hole in the stupid, piping, bag which meant the icing went all over me but oh I didn’t let that stop me from icing my cakes. Nope, I carried on icing my cupcakes and all I can say is at least they still look nice (ish) Then as I was finishing up my dad placed some mini eggs (which are AMAZING) on top which gave them that easter touch.

A few days later…

Always watch where you put the cupcakes as they fell on the floor as my mum got something that was next to them. Well i did save the best ones and placed them in a different place so luckily, they didn’t get destroyed. Phew, that was a rollercoaster of emotions!

Victoria Cake (Ish)

Right this cake was good, and at least it was better than the 1st one I did a couple of weeks ago. That one well…I couldn’t take a photo of as it fell to pieces so I put it in a bowl with some custard which was nice. (Good job it tasted good!) I think it was down to the recipe as that one was American and the not fail (ish) was British from a Be-ro book. it could have also been down to the amount of butter I added. who knows?

The cake I made on Saturday was good as it was in one piece but, the filling was a little runny from me quaddroopaling (can’t spell lol basically x4.) the amount of water I added which I instantly shouldn’t have done as now i have a big bowl of runny buttercream in my fridge sighing at me in disappointment. I’m disappointed as I can’t even spell disappointed. even though I knew the buttercream was runny I still used it and it went everywhere like an over-emotional waterfall (which is runnier than my buttercream!). the jam was good though as I didn’t make that. (phew!)

Even though it was messy I’m still proud of myself for making something edible and tasty (in one piece!)





White Bread Cobs


Once again I made more bread. This time, however, it was from a packet 🛍(Tesco, crusty, white ⚪, bread, mix.) I prefer making it from scratch but, it was there and I was bored 😴so why not. I also decided to play football ⚽ with my little brother 🙋‍♂️whilst I was waiting ⏰ for it to prove and bake 👩‍🍳 which was fun 🤪 but tiring 😴 lol. when they came out of the oven it smelt 👃 pretty good 👍 and I waited for them to cool 😎 down then I tried one and it tasted 👍 nice like bread 🍞 but, they were denser than the last bread I made; it might be down ⬇ to me not kneading 👩‍🍳 it for long enough but oh well.

p.s. I think I’m getting the hang of making bread! 😎

White bread loaf

2:16 pm- waiting for the bread to prove. I am very tired from all that kneading (5 MINS OF IT!) and it’s my 1st time. I feel like I’m on fire (probably shouldn’t wear a jumper) and the world’s strongest kneader!

later on… took me 3 hours (ish) to make it and it honestly was one of the best loaves of bread I’ve ever tasted. during the making, it didn’t really rise but I think it was down to me using plain flour and not bread flour. it was really hot but fun making it. however, someone (not naming) chucked it in the bin as it was “raw” apparently!

paul Hollywood would be proud!

Brownie cookies

I’ve made 👩‍🍳 brownies, brownie cupcakes 🎂 but I decided to turn it into a cookie 🍪 . They taste 😋 like brownies (obviously) but I kinda added a lot of salt to it (and I mean A LOT). I thought it would taste nice 👍 as I like salt but it tasted a bit too salty so if a recipe says an amount of salt, don’t go over ↗︎ it.

Red velvet cookies

These red ❤️ velvet cookies 🍪 are from and they taste amazing. It’s a bit disappointing as the chocolate🍫 chips 🍟 I added, overpowered the bake 👩‍🍳 and you couldn’t really taste 😋 the red velvet.

Pizza pockets

These pizza pockets are from and they are the perfect meal idea for kids. The cheese oozes out the sides and makes an extra crunch to the bake. They taste amazing and I would eat them all day if I could. But, I can’t because I’ll explode!

New york bagels

I love bagels for dinner as the butter and raisins melt in the mouth, whilst the crispy bagel adds an extra, delicious, crunch.

My favourite bagel is cinnamon and raisin because it’s nice and sweet.

This reminds me when I went to my 1st running race (global energy race) and we got 2 free packs of cheese bagels and a free one with a special topping on it. mmm… good times!

Vanilla cupcakes

These cupcakes were deliciously light, and fluffy. The recipe is from a classic, be-ro book which is a very good book if you want all the good stuff!
This cupcake was also the 1st one that I’ve ever iced and to be honest it was hard but so worth it as I think I did a good job apart from breaking the piping bag .
